Deconstructed Fish Curry!

Today we're going to take modern route in creating an Indian classic - Fish curry!

Total time to make: 30 mins


Ingredients Needed:

2 lbs salmon - 1 1/2 cherry tomatoes - 1 tsp salt - 1 tsp black pepper - 1 tsp sugar - 1 tsp chili flakes - 1 tbsp fish sauce - 1 pod of garlic, sliced - 1/4 cup of olive oil - dill leaves

This dish is quick and easy to make for everyone! And it's delicious!

  1. Add half the oil to the fried herbs, onions and garlic individually until crispy on a low/ medium flame. Make sure not to brown them as they might taste bitter! Set these aside.

  2. Infuse the same oil with chilli flakes, add cherry tomatoes, and roast. Make sure the tomatoes are not overcooked but covered with hot oil. Add the sugar and fish sauce. Check for salt and any seasoning that you may want to add for taste

  3. Now add the fish and the remaining oil on a medium higher flame. Cook until the skin of the fish is crispy. Add the roasted tomatoes back into the pot cover and cook for 10 mins or until fish is tender.

  4. Serve the fish, top the fish with fried onions and garlic and crumble the fried herbs for extra flavor.
