Blueberry compote

Ingridents:

2 cups of fresh or frozen blueberries

3 tablespoons water

1/4 cup sugar

2 teaspoons lemon juice

2 tablespoons water

In a heavy bottom pan mix all ingredients together except lemon juice. On a low flame bring it to a boil until it reduces to saucy consistency

it should take about 1/2 hour. Later add the lemon juice, mix well and switch off the flame allowing it cool and thickening the sauce.

You man use this as a spread or a preserve by adding citric acid.

But enjoy it as it is with pancakes and waffles or with some crunchy toast.
