Paneer

Paneer is a fresh cheese, common to the Indian subcontinent.

The origin of this cheese is quite debatable, hence we‘ll only enjoy making this amazingly simple home made cheese that is completely suitable for a perfect vegetarian meal.

The versatilely of this Cheese, gives us endless choices to experiment in almost any form of cooking.


It is an non melting and firm in nature It has a longer freezer life. Its quite simple to make that may surprise you. And you may reconsider buying it from stores.

Ingredients:

2 cups full fat or 2% milk

1 lemon



Method:


In a large heavy bottom pan bring milk to boil. Meanwhile cut the lemons into 4 pieces. Or squeeze out juice of one lemon to add to the boiling milk. Once the milk starts to curdle stop the heat. As lemon juice is an acid it reaacts with the milk to separate from the water. We now strain the water.

Allow it to cool.

At this point you may freeze the extra curdle as it is in the freezer or you may compress it on a tea towel or a cheese towel until all water if dried. At this point you may cut in to desirable sizes.
